Leeks with vinaigrette & the vegetable banquet – ENVIE

At ENVIE le banquet, Eloi Spinnler has reinvented the meal with friends. In this large, lively dining room, vegetables are shared, savoured and exchanged like a conversation. The banquet unfolds as a generous buffet, where everything exudes seasonality and spontaneity. The chef's vegan signature dish? Leeks with vinaigrette, tender and roasted to perfection, with a twist of lightly smoked vinaigrette and toasted almond crumbs. A nod to French tradition, but reimagined in a feel-good, resolutely plant-based way. Surprise... a sublime collaboration to be discovered on the menu until 25 January with YouTuber Squeezie, a highly comforting dish whose profits will be donated to the Petits Princes association.

Les pâtes du bonheur – HORIZ

Bright, soothing and sunny, at HORIZ vegan cuisine is reinvented around raw ingredients, bold flavours and a no-fuss aesthetic. At Horiz, discover Olivier Lin's ‘Les Pâtes du Bonheur’ (Pasta of Happiness), a creation inspired by south-east China. Delicate rice noodles are combined with Shanghai cabbage, crunchy carrots and red onions, all subtly stir-fried in a wok, paying homage to the recipe of the Lin brothers' grandmother.
